You may know Paso Robles, a well-loved, California wine region on the Central Coast. While many people know of this town for its 300+ wineries, it holds a secret. It has a budding craft distillery scene that not many people are aware of. The current Paso Robles Distillery Trail has over ten locations, but we’re going cover just three Paso Robles distilleries from the list (and one that’s currently not on the map yet). In the words of everyone that enjoys spirits tasting, “bottoms up!”
The All-Inclusive Experience At KROBĀR Craft Distillery
In the heart of Paso Robles Wine County, sits the Krobar Distillery, the first on our Paso Robles distillery stop. Step into a 1920’s distillery, situated on a hill overlooking Paso Robles vineyards. Most of the building is made from recycled materials. Repurposed sheet metal hangs on the walls, old tanks are sterilized for water storage, old
mechanical equipment is refurbished, and old barrels are now furniture. If you’re looking for atmosphere, you’ll find it here. But that’s not all. This distillery also has a restaurant, Barton’s Kitchen, on-site, in addition to a winery, Barton Family Wines. Within minutes you can go from tasting gin and whiskey to walking over to the winery and enjoy Cabernets and White Rhone Blends

The California Experience At Calwise Spirits Co.
On the edge of Paso Robles and Tin City, sits Calwise Spirits Co., right next to a winery tasting room and a brewery. Inspired by the California lifestyle, you’ll enjoy a bright-tasting room. This Paso Robles distillery offers spirits that have the sunny and earthy flavors of the Golden State to encourage the adventure in you. Here you’ll enjoy a variety of spirits, including from gin, rum, liqueur and more. Feeling peckish? They serve several bites from their on-site restaurant with Flatbread Pizza, Piquillo Peppers and more.

The Tin City Experience At Wine Shine
Right in the middle of Tin City, a hub of wineries, breweries, restaurants and artisans, is where this craft distillery is. This distillery is committed to blending age-old distillation techniques and innovative, nuanced infusions that are delightful to taste. (This is one of our team’s favorite Paso Robles distilleries to visit!) Get ready to taste powerful and delicious brandy, whiskey, and a variety of small-batch spirits that will surely leave your taste buds craving for more.

The Chef Experience At Central Coast Distillery
Outside of Paso Robles, in the quaint neighboring town of Atascadero, is where you’ll find the Central Coast Distillery. Founded by longtime Chef Eric Olson, this craft distillery produces handcrafted single batch spirits bottling only the pure heart of each run. Taking an unconventional method to the age-old craft of distilling has led them to venture out and create a range of spirits that complement a healthy lifestyle and can be enjoyed with little guilt. They offer an assortment of spirits, including rum, gin, vodka and bourbon whiskey. You can also purchase cocktails, which are made with local ingredients from the farmers’ market. During the weekend, the distillery offers unique meal pairings with the spirits.
